Culinary icon Jacques Pépin prepares 100 internationally inspired dishes using readily available ingredients, supermarket staples and simple techniques. Jacques Pépin: More Fast Food My Way (HD; 26x30) feeds Fridays at 1700ET (with repeats at 0200), beginning October 10.
On October 5, we premiere another stellar cooking series, Cook's Country From America's Test Kitchen (13x30; HD). In it, Christopher Kimball & Co. experiment with classic American recipes — three-layered chocolate blackout cake, Lexington-style pulled pork, potluck mac and cheese and many more. The crew also tests the most reliable and cost-effective cookware, kitchen tools and supermarket foods for the home cook.
Nestled in among our returning series is another familiar face. Beloved chef Lidia Bastianich continues her journeys throughout Italy to sample and perfect local specialties from Rome, Naples, Sicily, Treviso, Trieste and Padua in the second season of WHYY's Lidia's Italy II (26x30; WS), which begins feeding on October 11.
Stay in travel mode, beginning with two continuing series from OPB. Art Wolfe's Travels to the Edge II (13x30; HD) follows the acclaimed photographer to remote and awe-inspiring places — the untamed wilderness of Australia's Northern Territory, Mali by way of the Niger River and Iceland's elemental ecosystems. And in this season of Rick Steves' Europe V (13x30; HD), America' favorite travel expert ventures to a lamp-lit castle in France's Dordogne region, explores a secret underground fort in Switzerland and marvels at the Acropolis in ancient Athens. Then, an episode from WETA's Globe Trekker (1x60; WS) finds Top Chef's Padma Lakshmi in Southern Spain, where she feasts on tapas, paella and gazpacho, flamenco dances and strolls through Granada's olive groves. A little closer to home, KVIE's America's Heartland IV (22x30; HD) celebrates United States agriculture, horticulture and aquaculture — from remote corners of the least-populated states to the rooftop gardens of bustling metropolises. We conclude our world tour in Turkey with Rumi Returning (1x60; HD), which examines the writings, life and enduring popularity of Rumi, the 13th-century Muslim Sufi mystic.
Closing out October's new documentaries is Ten Crucial Days – The Road to Liberty (1x30; HD). This NJN special examines the significance of the Continental Army's 1776 Christmas-night crossing of the Delaware River and the three subsequent victories that turned the tide in America's battle for independence.

Mangia mia! Celebrate the Italy's culinary and cultural contributions this Columbus Day, October 13. The three-hour block begins at 1600, with Rick Steves' trip to Italy's scenic Amalfi Coast, followed Rudy Maxa's Smart Travels "Out of Rome." Next, the esteemed chefs at America's Test Kitchen cook up "Italian-American Classics" like baked manicotti and cheesy garlic bread, taste-test Parmesan cheese and reveal the best garlic presses. Later, chef John Folse highlights traditional fare from Louisiana's Italian immigrants in episode #1121 of A Taste of Louisiana "Italy 1: Italian Immigration to America". The block ends at 1830 with The Best Recipes in the World With Mark Bittman of the New York Times. "Never Basta Pasta" finds Bittman in Italia, indulging in the ultimate comfort food with pal (and Spain... on the road Again co-hort) Mario Batali.
